Garam
Masala with Chickpeas and Peas

2 cups Onion, chopped
2T Olive Oil
2 cloves Garlic, minced or pressed
3 cups Tomato Sauce, unseasoned
1 ½ cups Chick Peas
1 cup frozen Peas
½ cup Raisins
½ tsp Cumin
½ tsp Turmeric
1T Garam Masala
Cayenne pepper to taste
Salt and Pepper to taste
Add oil to skillet set on medium heat. Sauté onions until
they begin to become translucent. Then add garlic and sauté
for one more minute. Add chickpeas, sauté for 1 minute. Add
tomato sauce, peas, raisins and seasonings. Simmer for 5 minutes.
Add salt and pepper to taste. Serve with rice and/or plain yogurt.
I like to
make it spicy and serve with a dollop of plain yogurt on top to
help with the heat. All ingredients are healthy and it tastes
awesome.
Makes about 5 cups,

Rick's Famously Requested Salad
(All measurements are estimates)
Large head of lettuce, big bunch of spinach, other salad greens,
or combination
¾ cup sliced or slivered almonds
¾ cup crumbled Gorgonzola cheese
1 small-medium mild red onion
1 cup black olives, whole or sliced
Vinaigrette:
½ cup olive oil
1/3 cup red wine (or other) vinegar
2-3 cloves garlic
Pinch salt and pepper
Roast
almonds in a pan/skillet until lightly browned (no oil necessary)
allow them time to cool. Wash, spin, and tear up the greens. Put
in a big salad bowl. Add sliced red onion, gorgonzola, and black
olives. Add almonds once they are cooled.
For vinaigrette whisk oil, vinegar and chopped garlic in separate
cup/dish. You may sauté the garlic for a milder flavor.
Add salt and pepper to taste. Add to salad just before serving.
Toss and enjoy!
